Stuffed Tomatoεs And Peppers

Ingredients for 2 persons:

  • 4 ripe and firm tomatoes
  • 4 green bell peppers
  • 3-4 medium potatoes
  • 2 medium red onions, finely chopped
  • 2 cloves garlic
  • ½ bunch of chopped parsley
  • ½ bunch of chopped fresh mint
  • 8 tablespoons rice
  • 1 cup of Olive oil
  • 1 tablespoon sugar
  • 250gr. Tomato juice
  • 1 tablespoon pulp tomato
  • Salt
  • Freshly chopped pepper



Peel the potatoes and wash them very well together with the bell peppers and tomatoes. Cut the top of each tomato (do not separate it completely) and remove the flesh with a spoon. Do the same for the peppers. Put the rice, onion, garlic, parsley and mint in a bowl and mix. Add the tomato juice, a little pulp, a little water, olive oil, a little sugar, salt and pepper. Fill the tomatoes and peppers and place them in a baking tray. In another bowl, mix the potatoes, which we have cut into small pieces, with tomato juice, a little pulp of tomato, olive oil, salt and pepper. Place the potatoes in the pan between the tomatoes and the peppers. Finally, sprinkle with olive oil. Bake in a preheated oven at 180 °C for 1 hour and 30 minutes. Serve cold or hot.
